Rooftop Bar & Restaurant

Grand Baie's legendary lagoon looks even better from up here. Relax in one of the cabanas poolside. Yes, there’s an infinity pool, and it’s over 30 meters long. Sip cocktails while lunch is served at your in-water table. The cuisine up here is a creative mix of tapas from the world’s favourite cuisines. Full of flavours and colours. Even though it’s a grown-up area only, Bisou isn’t all drinking and dining. During the day, a deejay plays mellow, easy-to-listen-to beats. Come nightfall, when the sky turns blazing pink and orange, the music is turned up a notch. Bisou checks all the boxes for a perfect day and night out.

The Chef

Libanese Chef, Hani Totonji

Chef Hani was born in the city of Beirut, Lebanon, renowned for its nourishing cuisine full of whole grains, fruits, vegetables, fresh fish, and seafood. He loves rural living and has a profound connection to the land, which is reflected in his preference for sourcing fresh seasonal ingredients directly from small producers. Inspired by the culinary icon Gordon Ramsay since his youth, Chef Hani believes that opportunities lie within one's dreams. His passion lies in vegan and healthy cuisine, making every meal a sensory experience. Combining a European’s influence with his Lebanese heritage, Chef Hani's culinary creativity knows no bounds. His favorite ingredients include the delicate and versatile asparagus, and calamari from the Mediterranean Sea.

Dress code

  • As relaxing as a holiday is, we ask that you wear a cover-up over swimwear at our daytime restaurants. In the evening, an island chic wardrobe is a must (no flip flops!)

    P.S.: We love our striped bathrobes too but let's keep them for the spa and room.
